Gluten Free & Dairy Free Blueberry/Chocolate low calorie Muffin Recipe

We can have it all, ladies! Here's a delicious recipe we can enjoy as soon as we wake up to start the day.

I created this delicious, gluten-free, dairy-free blueberry, chocolate low calorie muffin recipe as a substitute for a boring breakfast routine. I was looking for a recipe with healthy ingredients that were low in calories, such as oatmeal, fruit, nuts and seeds. That's when I adapted this delicious recipe from a regular, sugary and calorie-loaded one, and came up with the blueberry/chocolate breakfast muffin. It hit all the spots: flavour, energy, nutrients, calories and satiation.

The recipe is gloriously simple.

Dairy-free/Gluten-free

Serving: 6

Calories: approx.300 per muffin

  • 2 cups gluten-free oats or oat flour

  • 3 tbs coconut yogurt

  • 2 eggs

  • Handful of shaved almonds

  • 1/2 cup of Blueberries, frozen or fresh

  • Handful of organic dark chocolate drops

  • Pinch of sea salt

  • 4 pitted dates (chopped)

  • 1 heaped tsp baking soda

  • 1 tsp vanilla extract

  • Preheat oven for baking: 230C 450F

  • Place the rolled oats in the food processor or high-speed blender and grind into a flour.

  • Place all ingredients in the mixing bowl and blend thoroughly with a spoon.

  • Fill a muffin tray and place it in the oven to bake for 25 minutes.

You can substitute blueberries, cherries and Raspberries. ENJOY! I know you will.
